February Recap

 Whew, it didn't take long for me to get behind! Welcome to my first monthly recap of the year... and it's only February! One day I'll get it together (maybe). We started the month off strong, celebrating Carl's 45th birthday with a seafood boil! He is the best! Happy Birthday, Carl!! We also went for a little visit to Wynne with Carlie and Wrenley. Makena had to work, and Trey was squirrel hunting with my uncle for the Arkansas Game and Fish's Big Squirrel hunt. I didn't get many pictures.  Wrenley was weirded out by the American Girl dolls on Nana's bed. She wanted to cover their eyes with their hair! Up next was Valentine's Day! This is my least favorite "holiday". I think that if you love someone, you show it every day, not just on a holiday. Carl and I opted for a quiet night in this year.  Our surf and turf was amazing! Crock Pot Marry Me Chicken

 Hello friends, it's time for another recipe from the homestead. This week we have another favorite recipe, Marry Me Chicken.  I think this recipe has dozens of variations, so here is ours! Ingredients: 4 bonesless, skinless chicken breasts 1 tablespoon olive oil 1 packet ranch seasoning mix 1 cup heavy cream 1/2 cup sun-dried tomatoes, chopped 1/2 cup parmasan cheese 1 teaspoon garlic powder 1 teaspoon onion powder 1/2 teaspoon dried basil 1/2 teaspoon red pepper flakes salt and pepper to taste Directions: Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper, then sear for 2-3 minutes on each side until browned. Transfer the chicken breasts to the crock pot. Whisk together ranch seasoning, heavy cream, garlic powder, onion powder, basil, and red pepper flakes in a small bowl. Pour the mixture over the chicken in the crock pot. Add chopped sun-dried tomatoes and Parmesan cheese over the top. Cover and cook on low for 4-6 hour...

Back To Life

 Happy Monday, friends! I am glad to be back in the land of the living! Carl and I have been sick for over a week now. I thought I may have been feeling better on Wednesday, but it came back with a vengeance late in the day. Wednesday was Grandparent's Day at Wrenley's school. Since Carl was pretty sick, my mom (Nanny) went with me, and Caleb's mom (JoJo) came also.  This was the only picture that we got. You can definitely tell that I am sick. Wrenley with her BeBe and her JoJo We didn't get a picture with Nanny :( My mom helped us out by cooking for us. Chicken and noodles are the best, especially when you are sick! The cornbread and green beans made it even better. Then this happened Flu B it is! By Saturday I felt a little more like myself.  I worked on my planners for a little while but I couldn't concentrate long enough to get much done. Just a few Valentine stickers on my monthly spread.
