Easy Cheesy Baked Ziti

 There's something about sitting down to a meal that brings the whole household together. It doesn't have to be fancy--sometimes the simplest dishes become the most memorable. One of my favorite go-to family meals is Cheesy Baked Ziti. It's quick enough for a weeknight, comforting enough for Sunday dinner, and almost guaranteed to leave everyone asking for seconds. This can be a very customizable meal. Add meat, go vegetarian or sneak in extra veggies. It's kid-approved and makes for great leftovers.


Ingredients

  • 1 pound ziti or penne pasta
  • 1 jar (24 oz) marinara sauce
  • 1 pound ground beef or Italian sausage (optional)
  • 2 cups shredded mozzarella cheese
  • 1 cup ricotta or cottage cheese
  • 1/2 cup grated Parmesan
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
Instructions
  1. Cook the pasta according to package directions until al dente. Drain and set aside.
  2. In a skillet, brown the meat (if using) with garlic, seasoning, salt, and pepper. Drain excess fat.
  3. In a large bowl, combine pasta, marinara sauce, ricotta, half of the mozzarella, and half of the Parmesan.
  4. Transfer mixture into a greased 9x13 baking dish. Top with remaining mozzarella and Parmesan.
  5. Bake at 375*F for 25-30 minutes, until bubbly and golden on top.
Serve it up with a side salad or just grab some garlic bread and call it good. Either way, you'll have happy plates and maybe even a few requests to make it again soon!

Friday Favorites

  Today I'm linking up with  Andrea  and  Erika  for the first Friday Favorites of 2025! Over the past three weeks, I have thoroughly enjoyed getting to spend more time with Wrenley. She is growing up so much. She is speaking in full sentences and is a clown to boot! We've enjoyed lots of naps in BeBe's bed, playing with baby dolls (one of her favorite things), and since I have to pick her up before 7 a.m. on the days she stays with me, we enjoy getting her favorites: donuts (nonuts) and hotcakes from McDonald's -not at the same time though! We have had our house in a bit of chaos like I'm sure everyone else has with all the holiday festivities (and with Carl being off). I am glad to have everything in its proper place! Friday Favorites

 Happy January 74th! Ok but really, why does January seem to go on FOREVER?! Today I am linking up with  Andrea  and  Erika  for Friday Favorites! This was definitely a favorite moment from this week!  Our 47th President, Donald J. Trump! Since Monday was also MLK day, I had the pleasure of watching sweet Wrenley.  Celebrating my niece, Ellie Kate's 15th birthday was definitely a favorite! I also watched Wrenley on Wednesday because she was a little under the weather. She had fun playing and getting lots of ice cream and popsicles! Wrenley will always be my favorite. On this day she wanted to "work" like BeBe. She's so precious, even with her little bedhead! Good Music is a favorite. Friday Favorites

Happy Friday, friends! We made it through another week here on the homestead. Today, I am linking up with  Andrea  and  Erika  for another Friday Favorites :) This week has flown by! On Monday, Wrenley started her new "school year" at daycare. Even though she is in the same school with a lot of the same kids, she moved up and is now officially in PreK! She has had to adjust to new teachers, but seems to like it so far :) She is BeBe's big girl! 💓💓💓 At the beginning of the week, Carl asked if Makena and I wanted to go with him and Trey put some corn and salt blocks out for the deer. Say less, sir! Of course, our answer was yes :) Our chariot and driver Trey and Maggie Hopefully, our hard work pays off! Also came across this guy. He was around 5 ft. long and had 14 rattlers. Don't ask how I know that 😟 We always have a good time when we hang out with our guys, and that is most certainly a favorite! Watching my girl do her thing at work will always be my favorite!...
