Strawberry Shortcake Cups

 Ah February, the month of love. I love a good theme month, and I also love loving on my people! I know that most of the time the way to their heart it through their stomach💗 Today I want to share my recipe for Strawberry Shortcake Cups. 



Ingredients

Strawberry Filling

  • 2 cups fresh strawberries, sliced
  • 1/4 cup granulated sugar
  • 1 teaspoon lemon juice
Shortcake Cups
  • 2 cups prepared pound cake or vanilla cake, cubed
Whipped Cream
  • 1 cup heavy whipping Cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
Instructions
  1. In a bowl, toss sliced strawberries with sugar and lemon juice. Let sit for 15-20 minutes until juicy.
  2. In a separate bowl, whip heavy cream with powdered sugar and vanilla until soft peaks form.
  3. To assemble, layer cake cubes in the bottom of small cups or jars.
  4. Spoon strawberries and juices over the cake.
  5. Add a layer of whipped cream.
  6. Repeat layers once more, finishing with whipped cream and strawberries on top.
  7. Chill for 10-15 minutes or serve immediately.
Serving Ideas
  • Garnish with a whole strawberry or heart-shaped strawberry slice
  • Add white chocolate shavings for a romantic touch
  • Serve in clear glass jars or dessert cups
Strawberries have always been a symbol of love--sweet, simple, and meant to be shared. This dessert is less about impressing and more about enjoying the moment. A reminder that love doesn't have to be complicated to be meaningful.

Friday Favorites

 Woo Hoo, it's Friday! Just last week I was talking about how this month is flying by, but this week has moved at a snail's pace! Today, I am linking up with  Andrea  and  Erika  for Friday Favorites. I have been working on my fitness for about a year now, more seriously in the past 6 months.  Happy Friday, friends! Today I am linking up with  Andrea  and  Erika  for another Friday Favorites. This is going to be a rapid-fire Friday favorites because it is getting late and I have to wake up extra early to pick up a special little girl :) The said little girl! This time she was on her "home turf". She did a presentation on The Stuttgart Army Airfield for a historical group at our community center.
