Easy Taco Soup

 Happy Hump Day, friends! I want to share one of my favorite recipes. If your family loves taco night, wait until you try this cozy twist--Taco Soup! It's everything you love about tacos (bold flavors, customizable toppings, and kid-approved goodness) but in a hearty, one pot meal that's ready in under 30 minutes. This recipe is perfect for busy weeknights, chilly evenings, or even when you're hosting friends and need something simple but crowd-pleasing. Bonus: it makes great leftovers, which means tomorrow's lunch is already taken care of!


Ingredients

  • 1 lb ground beef or ground turkey
  • 1 small onion, diced
  • 1 can corn, drained
  • 1 can black beans, rinsed and drained
  • 1 can kidney beans, rinsed and drained
  • 1 can Rotel
  • 1 packet taco seasoning (or homemade)
  • 1 packet ranch seasoning 
  • 2-3 cups chicken or beef broth (depending on how thick you like your soup)
Instructions
  1. In a large pot, brown the ground beef/turkey with the diced onion. Drain any excess grease.
  2. Add in the corn, beans, Rotel, taco seasoning, ranch seasoning, and broth. Stir well.
  3. Bring everything to a boil, then reduce heat and let simmer for 20-25 minutes.
  4. Ladle into bowls and top with your family's favorite toppings.
Topping Ideas
Make it a build-your-own-bowl dinner! Set out toppings and let everyone customize:
  • Shredded cheddar cheese
  • Sour cream
  • Crushed tortilla chips
  • Avocado slices
  • Fresh cilantro
  • Lime wedges

This recipe is perfect for meal prepping. Double the batch and freeze half for a busy night when cooking just isn't on the agenda.

Monday Morning Chit-Chat

  Happy Monday, friends! Well, here we are again. Another Monday morning, another fresh week, and another cup of coffee that I'm hoping will magically give me the energy to accomplish all the things on my to-do list. Friday Favorites

 Happy Friday, Friends! Today I'm linking up with  Andrea  and  Erika  for another Friday Favorites. What a week it has been! Having picnics with Wrenley and Makena were pretty high up on my favorites list. She wanted a lunchable (big surprise there!) while Makena and I had tuna salad. Playing outside is a must with Wrenley! And she loves making sure the bird bath has plenty of water! Another thing on my favorites list is listening to Trey play the guitar.
