What's Up Wednesday

Happy Wednesday friends!  Today I am joining in with  Shay  and Sheaffer  for What's Up Wednesday! What We're Eating... I've brought back one of our favorite meals of all time...chicken spaghetti! I found this simple recipe years ago. Start your spaghetti (boil on the stove) Melt 4tbs. of butter then add your soups.  Mix together on low or my stove has a melt setting. Cube half of your Velveeta and place in with the soup/butter mixture and melt.  Add Rotel. Add Chicken (2 cups) and stir in until it's all coated. (Normally I would use rotisserie chicken and pull the meat off, but our Wal-Mart was out of whole chickens, so I bought this package.)   Drain spaghetti and stir chicken and cheese mixture in.  Bake at 375 for 15 minutes, until golden on top. Look at that cheesy goodness! We like to serve with a side of veggies and Mexican cornbread. It is the perfect comfort food. What I'm Reminiscing About... As we are ending this school year,...

Happy Easter!

Happy Easter!  We had an amazing Easter weekend celebrating not only Easter, but also Caleb's 25th birthday.  Wrenley was excited to have a low country boil for her daddy's birthday! She also got her Easter present from BeBe and Pappy and Nanny and Pop. A new wagon! It's so fun to photograph baby animals :) All of my kiddos The Five Mungers plus two! Hope you all had a terrific Easter weekend.  I am thankful that we serve a Risen Savior! Much Love, Beth

We've Moved!

We are the happy new owners of my grandparents' house!  We have prayed for so long for a new house but were not in the position to make that happen.  While it would have been nice to have this much room while our kids were younger, we know that God's timing is always best.  I remember several years ago, Papa saying how he wished we could just trade houses because him and Grammy didn't need all the space, so I know he would be happy that we are here.  The coolest thing is that there isn't anything in this house that he hasn't touched.    We have made lots of changes on the inside and have many more planned for the future.  I'm also thinking about painting the shutters black and painting both the front and back doors black.  Carl and I still have to come to an agreement on all of that :) Boone is making himself right at home too! We have the best view of the sunset here, and a great porch swing to watch it from! Wren approves! We are so ...

Hitting a Nerve

A while ago I had a discussion with a friend about being easily offended and how it seemed to be an epidemic these days.  This has been saved in my drafts for at least a month now.  We have had a lot going on around here and honestly, I just didn't have the time or energy to finish it.  Wouldn't you know it, something happened today that triggered my memory of this post.  I did my best to wrap it up. I hope this makes sense and helps someone (it sure helped me). There are certain sins in our lives that get swept under the rug because they aren't the big obvious ones like murder, stealing or addictions.  They become like pet sins; those sins that feel safe to keep in our lives. Who are they harming?  One pet sin that I think is wreaking havoc on our world today is being easily offended. Do you rehash all day why the cashier treated you rudely? Do you refuse to enjoy a meal because the waiter forgot to bring the sause you requested for the fries that ar...

A Doozy

Happy Monday friends! What are ya'll doin'?  We are just waiting for this nasty ice storm that is headed our way.  Ice sucks.  It means power outages.  Although we have a generator, it is still not ideal.  And if power goes out at our post office (where our internet comes from) we lose our internet, which means we lose our television, as well as our phone service.  You see why I am dreading this?! I digress.  Let's talk about the doozy that was all of last week!   Ya'll, I didn't even know it was possible to be as tired as I was.  When I say it took me ALL weekend to recover, it is not an exaggeration.  Having a four-month-old while homeschooling a teenager (who is easily distracted) isn't easy. To add to that, my dad was at an international poultry show in Atlanta, leaving it to me to help out when my mom needed (which I ended up taking her to the ER one night). I was drained when Friday came.  There is much more to the ...
